Sweet Potato Toasts
I am so excited to share this recipe with you, Sweet Potato Toasts. I have never been a lover of bread, or grains in general, in particular for breakfast. I’ve seen the idea of having sweet potato toast floating all over the internet lately so I had to try it for myself.
I love the idea that you can create multiple variation of toasts, you can add sweet toppings such as nut butters and fruits or add your traditional avocado and poached egg that you would on you regular loaf of bread.
So lets ditch the traditional toast for this weekend and lets get creative with these sweet potatoes, shall we?
Tips for Making the Best Sweet Potato Toast
Making Sweet Potato Toast is quite simple just requires a little of preparation.
I recommend picking sweet potatoes that are slightly thick or “tube shaped” so that you can assemble your toppings without running out of space.
To make the toast, start by cutting the sweet potato in half lengthwise with a sharp knife. From there continue to slice each half into slices that are 1/4″ thick. Another alternative for slicing the sweet potatoes is a mandolin slicer, I don’t have one so I went with option number 1.
Arrange the sweet potato slices on a baking sheet with parchment paper, spray with some olive oil.
Place baking sheet in a toaster until sweet potatoes are for tender but not too soft.
Allow toasts to cool down before adding your toppings.
Sweet Potato Toasts Ideas
Now that your toasts are ready you can get creative. The variety of toppings you can use are pretty much endless, these are the three that I came up with.
- Avocado slices and poached egg
To make this toast, simply slice half of avocado and assemble on top of sweet potato. Then add your poached egg and garnish with some microgreens and sesame seeds. Yum!
- Almond butter and strawberries
Spread about 1 tbsp of almond butter and top with strawberry slices.
- Peanut butter and blueberries
Last but not least, similar to the above, I just spread 1 tbsp of peanut butter on the sweet potato toast and top with some blueberries.
