5 Minute Chocolate Chip Blondies
Attention! Attention! There’s new chocolate chip blondies recipe in town. The best part is that they are ridiculously easy to make: very few ingredients mixed in a bowl and made in no time. These chocolate chip blondies are the best flourless, dairy free and paleo dessert you could have. Topped with chocolate chunks and sea salt, these are my all-time favorite.
The Recipe
This recipe came to life after having crazy cravings for something sweet one day. I wanted something easy and made with healthy ingredients. I looked at several recipes for inspiration and the majority of them called out for some type of nut butter. Since I couldn’t wait for my sweet treat and I wanted it like NOW! I looked in my pantry for available ingredients. I found myself with peanut butter and cashews to work with, so I decided to give this combination a try.
How to Make 5 Minute Blondies
Okay, so you are going to love the easy prep time for this blondies. Because who has time to wait for dessert, right?
You will start by pulsing raw cashews in a food processor until finely ground. You want to end up with a flour-like consistency. I do not recommend soaking the cashews beforehand as they will become butter.
Then, you’ll add all remaining ingredients (except chocolate chunks) to the food processor, mix them well and viola! you have completed your blondies preparation.
You will then transfer the dough to a baking sheet lined with parchment paper and bake for approximately 20 minutes.
See, I told you this delicious dessert can be made when you are short in time or like me… cannot wait for something sweet.
How to Freeze Blondies
In case you have some leftovers (I doubt it) or decide to make a big batch, you can freeze these babies for a later time.
After they are completely cooled wrapped them up with plastic wrap and place them in the freezer. When ready to eat your blondies, thaw them on your countertop for a few hours and them pop them in the oven to get that melty and gooey chocolate.
5 Minute Chocolate Chip Blondies
Ingredients
- 1 cup raw cashews
- 1/2 cup creamy peanut butter
- 3/4 cup coconut sugar
- 1/4 cup melted coconut oil
- 2 large egg
- 1 tsp baking soda
- 1 tbsp vanilla extract
- 1/4 tsp pink himalayan salt
- 1/2 cup darl chocolate chunks (72% cacao recommended)
- flaked sea salt for topping
Instructions
- Preheat oven to 350°F.
- Pulse cashews in a food processor until finely ground. Consistency should be flour-like.
- Add peanut butter, coconut sugar, coconut oil, egg and vanilla extract to the food processor, pulse until all ingredients are mixed well.
- Stir in the baking soda and chocolate chunks.
- In a baking pan lined with parchment paper, spread the blondie mixture evenly.
- Transfer to oven and bake for 20 minutes or until toothpick comes out clean.
- Let blondies cool before removing from pan. Then sprinkle with sea salt and cut into 12 squares.
