Preheat oven to 350°F.
Pulse cashews in a food processor until finely ground. Consistency should be flour-like.
Add peanut butter, coconut sugar, coconut oil, egg and vanilla extract to the food processor, pulse until all ingredients are mixed well.
Stir in the baking soda and chocolate chunks.
In a baking pan lined with parchment paper, spread the blondie mixture evenly.
Transfer to oven and bake for 20 minutes or until toothpick comes out clean.
Let blondies cool before removing from pan. Then sprinkle with sea salt and cut into 12 squares.
