5 Minute Chocolate Chip Blondies

These flourless, dairy free and paleo chocolate chip blondies are ridiculously easy to make. Preped in only 5 minutes for the best dessert you could have.

Ingredients
  

  • 1 cup raw cashews
  • 1/2 cup creamy peanut butter
  • 3/4 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 2 large egg
  • 1 tsp baking soda
  • 1 tbsp vanilla extract
  • 1/4 tsp pink himalayan salt
  • 1/2 cup darl chocolate chunks (72% cacao recommended)
  • flaked sea salt for topping

Instructions
 

  • Preheat oven to 350°F.
  • Pulse cashews in a food processor until finely ground. Consistency should be flour-like.
  • Add peanut butter, coconut sugar, coconut oil, egg and vanilla extract to the food processor, pulse until all ingredients are mixed well.
  • Stir in the baking soda and chocolate chunks.
  • In a baking pan lined with parchment paper, spread the blondie mixture evenly.
  • Transfer to oven and bake for 20 minutes or until toothpick comes out clean.
  • Let blondies cool before removing from pan. Then sprinkle with sea salt and cut into 12 squares.
