Today I find myself writing this post from the lovely sunshine state, Florida. I am here to spend the holidays and end the year with family and friends. I hope you are having a lovely holiday season as well.

Over the past few weeks I’ve created a great amount of content, but haven’t had the time to publish it here in the blog. Taking advantage of this mini holiday vacation I hope to work on the recipe posts to finally share my creations. I hope you get to enjoy them as much as I do.

Now, enough of me going on a tangent. Lets get into this recipe.

Why should you make these Whole 30 Sloppy Joes?

If you ever thought recreating a Sloppy Joe recipe in a healthy way was not possible, I’m here to come to the rescue. All you need to make a tasty meal is a variety of healthy ingredients and a little bit of creativity.

In this recipe I use ground beef tossed in a savory tomato sauce which includes onions, green bell peppers, garlic, coconut aminos and spices. This mixture is then stuffed in lovely baked sweet potatoes which are then topped with thinly sliced green onions.

Now if you know me, you know that I am always finding a way to create recipes that are ideal for meal prep. The way you can meal prep these Sloppy Joes is by storing the ground beef mixture and the sweet potatoes separately. When you are ready to prepare your meal, simply heat up your ingredients, cut your sweet potatoes in half and stuff them with your protein.

These Whole 30 Sloppy Joes are made with healthy ingredients without loosing that amazing traditional taste. They are simple enough for a weekday lunch or dinner and make great leftovers too!

Ingredients
  

  • 5 medium sweet potatoes
  • 1 lb ground beef
  • 1/2 green bell pepper, finely diced
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup coconut aminos
  • 2 tbsp tomato paste
  • 1/2 tsp chili powder
  • 1 tbsp olive oil
  • 1/4 tsp red pepper flakes (optional)
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400 °F.
  • Scrub the sweet potatoes and pat them dry. Using a fork, pierce each sweet potato several times. Then, place them in a baking sheet lined with aluminum foil and bake for 45 minutes.
  • While the potatoes cook, heat olive oil in a skillet over medium-high heat. Add the bell peppers, onions and garlic. Cook for about 5 minutes or until slightly tender.
  • Add the ground beef and cook for about 8 minutes or until cooked through. Season with salt and pepper.
  • Add the chili powder, red pepper flakes and tomato paste. Combine all ingredients with the ground beef mixture.
  • Finally, add the coconut aminos and combine well.
  • Once the potatoes are cooked, remove them from the oven and make a slit lengthwise. Carefully, open the sweet potatoes and stuff them with the ground beef mixture. Top with sliced green onion and enjoy!
