- 5 medium sweet potatoes
- 1 lb ground beef
- 1/2 green bell pepper, finely diced
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/4 cup coconut aminos
- 2 tbsp tomato paste
- 1/2 tsp chili powder
- 1 tbsp olive oil
- 1/4 tsp red pepper flakes (optional)
- salt and pepper to taste
Preheat oven to 400 °F.
Scrub the sweet potatoes and pat them dry. Using a fork, pierce each sweet potato several times. Then, place them in a baking sheet lined with aluminum foil and bake for 45 minutes.
While the potatoes cook, heat olive oil in a skillet over medium-high heat. Add the bell peppers, onions and garlic. Cook for about 5 minutes or until slightly tender.
Add the ground beef and cook for about 8 minutes or until cooked through. Season with salt and pepper.
Add the chili powder, red pepper flakes and tomato paste. Combine all ingredients with the ground beef mixture.
Finally, add the coconut aminos and combine well.
Once the potatoes are cooked, remove them from the oven and make a slit lengthwise. Carefully, open the sweet potatoes and stuff them with the ground beef mixture. Top with sliced green onion and enjoy!
