Mojo Pork Tacos
These Cuban inspired Mojo Pork Tacos are going to rock your world! No joke. I adapted the traditional recipe into a healthy version so that you get to enjoy this meal with no guilt.
So, how did I came up with this recipe? I was in South Florida (my home state) during the holidays. One of the things that I can’t really pass on while I’m there is Cuban food. This time I ordered “Lechon Asado”, a delicious roasted pork marinated in a citrus sauce. This meal made me realize that I’ve never created a Cuban inspired recipe before. So as soon as I got home, I got to work.

Gone are the days when you have to invest a lot of time to make a tasty meal. For this recipe, all you need is 10 minutes for preparation and the one and only slow cooker. I’ve mentioned several times before how this kitchen appliance is a life saver. If you haven’t used one yet, I highly encourage you to buy one. It will make your life a lot easier.
For this recipe all ingredients are gathered in the slow cooker, covered and cooked away for 8 hours. That’s all.

I developed this recipe with meal prep in mind. This mojo pork makes a great amount and can be adapted for a variety of dishes. Make tacos, burrito bowls, and even a salad so you can get through the week with a different lunch every day. Just get creative and play with your ingredients, I assure this pork will taste great on pretty much anything.

If you’ve committed to do a Whole 30 this new year, I’ve got you covered. I’ve created this recipe so that it’s made entirely with natural ingredients. There’s never a need to sacrifice flavor for the sake of eating healthy, at least not in this blog. These tacos will make your taste buds very happy.
This meal is Whole 30 adaptable as you can use lettuce wraps to replace tortillas. Also, if you choose, you can combine the mojo pork with your favorite option of veggies and carbs.

Mojo Pork Tacos
Equipment
- Slow Cooker
Ingredients
- 3 Lbs pork shoulder
- 1 medium onion, diced
- 2 Tbsp lemon juice
- 5 cloves garlic, minced
- 1 1/2 medium oranges, juiced
- 1/2 Tbsp oregano
- 1 Tbsp cumin
- 2 Tbsp olive oil
- 1 Tsp ground pepper
- 2 Tsp salt
For serving
- corn tortillas, or romaine lettuce if Whole 30
- sliced jalapenos
- lime wedges
- avocado slices
- cilantro
Instructions
- Start by cutting the pork into big chunks.
- Using a medium skillet heat the olive oil over medium high heat. Add the pork and cook until brown on both sides. Remove chunks and transfer to slow cooker.
- In a small bowl combine the salt, pepper, oregano, cumin, orange juice and lemon juice. Whisk well.
- Pour the juice and seasoning mixture over the pork.
- Add the onions and garlic and stir to combine.
- Cook on low for 8 hours. When pork is tender, remove the lid and shred with a fork. Stir so that the meat combines with all the juices.
- Serve the pork in tortillas or lettuce wraps if Whole 30. Top with avocado slices, sliced jalapenos, cilantro and lime wedges. Enjoy!
