Start by cutting the pork into big chunks.
Using a medium skillet heat the olive oil over medium high heat. Add the pork and cook until brown on both sides. Remove chunks and transfer to slow cooker.
In a small bowl combine the salt, pepper, oregano, cumin, orange juice and lemon juice. Whisk well.
Pour the juice and seasoning mixture over the pork.
Add the onions and garlic and stir to combine.
Cook on low for 8 hours. When pork is tender, remove the lid and shred with a fork. Stir so that the meat combines with all the juices.
Serve the pork in tortillas or lettuce wraps if Whole 30. Top with avocado slices, sliced jalapenos, cilantro and lime wedges. Enjoy!
