I was going through my Instagram account the other day and I noticed that my most liked photo to this date is the one for No Bake Brownie Energy Bars. I posted this photo two years ago on March 19, 2018. I was creating recipes and practicing photography back then but never got started on creating a blog. Now, that I have this platform, I decided to finally share the recipe with you. I hope you like them.

In order to make this post, I had to dig deep in my archives to find this recipe. I wasn’t too organized or serious about this blog before so finding my notes for these No Bake Brownie Energy Bars was definitely a challenge. Anyway, I know you are here for the recipe, so lets get into it.

No Bake Brownie Energy Bars

These brownies were created with the idea of packing as much goodness as possible in a very compact and delicious treat. These bars are packed with super food ingredients including medjool dates, pistachios, dried cherries, walnuts, chia seeds, pecans and coconut. If you are feeling adventurous, feel free to add your favorite ingredients as well. Hemp seeds, wheat germ and any other dried fruit would go well in these fudgy energy bites.

When making these brownies it is recommended to store them in the freezer to keep them fresh for longer. However, if you like them as much as I did, you might finish them in one sitting. If you do, feel no guilt as these are healthy, nutritious and naturally sweetened.

These No Bake Brownie Energy Bars are packed with super food ingredients including dates, pistachios, cherries, walnuts, chia seeds, pecans and coconut. Covered with chocolate and sea salt these are the perfect treat.

Ingredients
  

  • 1 tbsp chia seeds
  • 1 cup pitted medjool dates
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup dried cherries
  • 1/4 cup pecans
  • 1/4 cup walnuts
  • 1/4 cup shelled pistachios
  • 1 tsp vanilla extract
  • 1 tbsp melted coconut oil
  • pinch sea salt

Chocolate Coverage (optional)

  • 1/4 cup 70% coconut chips/chunks
  • 1 tbsp melted coconut oil

Toppings

  • 1 tbsp dried cherries
  • 1 tbsp chopped pistachios
  • 1 tbsp chopped walnuts

Instructions
 

  • Add dates, pecans, walnuts and pistachios to a food processor. Process until a sticky dough is formed.
  • Fold in the melted coconut oil, chia seeds, vanilla, dried cherries and shredded coconut. Pulse until ingredients are fully combined.
  • Line a 9" x 5" baking pan with parchment paper. Then, add dough and press gently until you achieve a smooth and even surface.
  • In a small pan melt the chocolate chips and coconut oil over low heat. Another alternative is to microwave in low until fully meted. 30 seconds intervals is recommended.
  • Pour chocolate mixture over dough and spread evenly. Then, top with chopped pistachios, dried cherries and chopped walnuts. Sprinkle with a pinch of sea salt.
  • Transfer pan to the freezer for at least 1 hour. When ready, remove brownie block from pan and cut into 6 even squares.
  • Store brownies in the freezer. Enjoy!
