Add dates, pecans, walnuts and pistachios to a food processor. Process until a sticky dough is formed.
Fold in the melted coconut oil, chia seeds, vanilla, dried cherries and shredded coconut. Pulse until ingredients are fully combined.
Line a 9" x 5" baking pan with parchment paper. Then, add dough and press gently until you achieve a smooth and even surface.
In a small pan melt the chocolate chips and coconut oil over low heat. Another alternative is to microwave in low until fully meted. 30 seconds intervals is recommended.
Pour chocolate mixture over dough and spread evenly. Then, top with chopped pistachios, dried cherries and chopped walnuts. Sprinkle with a pinch of sea salt.
Transfer pan to the freezer for at least 1 hour. When ready, remove brownie block from pan and cut into 6 even squares.
Store brownies in the freezer. Enjoy!
