I haven’t talked about this topic before, but the truth is… I am a meal prep Queen! Yes, I said it. Ever since I started working my full-time job, I meal prepped every single week. I am a huge promoter of living a healthy and balanced life; and diet is a great portion of achieving such thing.

My favorite way to meal prep is to make two to three large meals on Sunday so that I have enough lunches and dinner during the work week. The hours I dedicate to meal prep on the weekend are so worth it because it saves me a lot of time and energy during the week. I highly suggest doing it.

If you wonder if I get tired eating the same meals for a week, the answer is absolutely not. I assure that my meals are tasty and satisfying because maintaining a healthy diet should not be all about sacrifices. And trust me, if you make meals such as this taco casserole you will always look forward to the leftovers!

Ingredients
  

  • 4 medium sweet potatoes
  • 2 lbs ground beef
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tbsp avocado oil
  • 2 tsp onion powder
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp dried oregano
  • 1 tbsp garlic powder
  • 1 tbsp chili powder
  • 1/4 tsp cayenne pepper
  • 1 tsp pepper
  • 1 tsp salt

For Toppings

  • sliced jalapenos
  • sliced avocado
  • chopped cilantro
  • chopped tomatoes

Instructions
 

  • Preheat oven to 400°F.
  • Scrub and pat dry sweet potatoes. Pierce them with a fork and wrap them in aluminum foil.
  • Place sweet potatoes in a baking sheet and bake for 45 minutes or until fork tender.
  • In the meantime, heat avocado oil over medium-high heat in a medium skillet. Add onions, bell peppers and garlic. Saute until onions are tender, 4-5 minutes.
  • Add the ground beef and all remaining spices. Breaking up the meat, cook until no longer pink, about 7-8 minutes. Set aside.
  • When sweet potatoes are fully cooked, remove from oven and let them cool, you don't want to burn your hands. Remove aluminum foil and peel skin. Place them in a medium bowl and smash them with a potato smasher.
  • Evenly spread mashed potatoes in a casserole dish. Top with ground beef mixture.
  • Finally, garnish with sliced jalapenos, avocados, diced tomatoes and chopped cilantro. Enjoy!
