No Bake Taco Casserole

- 4 medium sweet potatoes
- 2 lbs ground beef
- 1 yellow onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 tbsp avocado oil
- 2 tsp onion powder
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp dried oregano
- 1 tbsp garlic powder
- 1 tbsp chili powder
- 1/4 tsp cayenne pepper
- 1 tsp pepper
- 1 tsp salt
For Toppings
- sliced jalapenos
- sliced avocado
- chopped cilantro
- chopped tomatoes
Preheat oven to 400°F.
Scrub and pat dry sweet potatoes. Pierce them with a fork and wrap them in aluminum foil.
Place sweet potatoes in a baking sheet and bake for 45 minutes or until fork tender.
In the meantime, heat avocado oil over medium-high heat in a medium skillet. Add onions, bell peppers and garlic. Saute until onions are tender, 4-5 minutes.
Add the ground beef and all remaining spices. Breaking up the meat, cook until no longer pink, about 7-8 minutes. Set aside.
When sweet potatoes are fully cooked, remove from oven and let them cool, you don't want to burn your hands. Remove aluminum foil and peel skin. Place them in a medium bowl and smash them with a potato smasher.
Evenly spread mashed potatoes in a casserole dish. Top with ground beef mixture.
Finally, garnish with sliced jalapenos, avocados, diced tomatoes and chopped cilantro. Enjoy!
