Skillet Sweet Potato Hash

Ingredients
  

  • 1 large sweet potato, diced
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1/2 yellow or white onion, diced
  • 1 handful of kale
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • salt and pepper to taste

Method
 

  1. In a skillet heat olive oil over medium high heat. When hot, add sweet potatoes, let cook for about 5 minutes. You add the sweet potatoes first as these take longer to cook.
  2. Add bell peppers, onions and kale. Season with garlic powder, salt and pepper. Cook until onions, bell peppers and sweet potatoes are fork tender. Taste and add more salt and pepper if needed. Enjoy!
